Pound cake and Victoria sponge with Strawberry Jam

I’ve never heard of Pound cake before and stumbled across it today whilst flicking through my cook books. You need some really basic ingredients to make a great simple little cake 🙂

Seeing as I’m home from work at the moment due to an injury and with my mood being rather lo due to a variety of different things in life I thought I’d bake some cakes to help cheer myself up as baking always doed that for me!!

The recipe for the sponge cake can be found on one of my previous posts. Instead of using the butter icing for a filling I’ve used homemade strawberry jam given to us by a friend and sprinkled over some icing sugar. May have gone a little overboard with the icing sugar but oh well.

For the pound cake, you need;

  • 185g Unsalted butter, softened
  • 165g Caster sugar
  • 1 tsp Vanilla extract
  • 3 eggs, room temperature
  • 100g Plain flour
  • 75g Self-raising flour
  • 60ml Milk
  • Icing sugar to sprinkle over for decoration
  • A loaf tin of 8 x 19cm

I used a slightly larger loaf tin which worked just as well. All that happens is your resulting cake is a little thinner and longer. No biggy 🙂

To make:

  1. Preheat the oven to 180°
  2. Grease your tin with butter and then line with grease proof paper
  3. Mix together the butter, sugar and vanilla extract until pale and creamy
  4. Add the eggs one at a time mixing well between each
  5. Sift together the 2 types of flour into a bowl
  6. Gradually add a small amount of flour and milk and using a metal spoom fold into the mixture
  7. Continue until all the flour and milk has been added and the mixture is well combined
  8. Pour into your tin and smooth the top
  9. Bake for 40-45mins or until golden brown and scewer inserted in the middle comes out clean
  10. Leave to stand for 10mins before removing from the tin and placing on a cooling rack
  11. Them sprinkle over the caster sugar

Both of these are great cakes to make if you haven’t got masses of time on your hands or if you only have basic ingredients at home. They are simple and oh so easy to make 🙂

I will do my best to do some more baking and keep blogging about it. I’ve just been given a cook book which has some great recipes in. However my next cake shall be a Medeira cake as it’s my Dad’s favourites and I didn’t get chance to make him one for farther’s day. Also it’s my favourite as well 😉
